When shopping for fresh peas—variously labeled green peas, English peas, shell peas, or garden peas—look for pods that are smooth and bright green and snap crisply when you bend them. Peas begin showing up in market bins in the spring and are at their best from late spring into early summer. One pound of unshelled peas yields about one cup shelled.
