The key to producing this robust golden broth is taking the time to brown the chicken wings and beef bones properly. The sucs, or browned caramelized bits that result from this step, are left in the pan to enhance the flavor of the broth. You could enjoy the broth on its own, but adding the crespelle (savory herbed crêpes) makes it that much better.
