The flavors of Morocco—warm spices, fresh citrus, and fragrant orange-flower water—enliven this refreshing carrot-ginger blend. Although this colorful soup can be enjoyed at room temperature, it tastes best when served well chilled.

  • 2 tbsp. extra-virgin olive oil

Method

Heat oil in a medium saucepan over medium. Add carrots and ginger and cook until soft, 15 minutes. Meanwhile, combine cinnamon, cumin, ginger, cayenne, and nutmeg in a 10″ skillet over medium and cook until fragrant, about 1 minute.
