My mom was a routine-oriented cook, with certain days designated for specific dishes. This pork tenderloin was in the weekly rotation; even so, I never tired of it. I make this version for my family a few times a month, often pairing it with roasted sweet potatoes or cauliflower and a simple arugula salad. It’s clean, light, and affordable and is a family favorite all over again.
