Lovely, simple, cool, and fresh, this is a coconut cake that would even hit the spot on a hot summer day. Prepare it ahead, making the cake layers and grating or setting out the coconut. Then you can whip up the cream and quickly assemble the cake when you are ready to produce a spectacular, but not exhausting, dessert. You could also create a little inner beauty by icing each layer with strawberry, raspberry, or blackberry jam before spreading on the whippedcream frosting.
