Unlike most regional foods, biscuits have become increasingly popular in the twentieth century and have been adopted with great success by fast-food restaurants, some of which do a creditable job with the southern standby. There is probably no easier way to provide a good, homebaked bread for any meal. In Kentucky and Tennessee, the raw, cut dough is often fried in hot fat to accompany fried chicken.
