This rich sweet potato pone should be served with simply prepared meats such as grilled chops or fried chicken. It is not appropriate for delicate seafoods or subtle sauces.

Using a blending fork or mixer, cream the ¼ cup softened butter with the brown sugar until light and fluffy. Beat in the eggs and then add the fruit zest, juice of the orange, ginger, cinnamon, white pepper, and salt. Mix thoroughly and reserve.

Peel the sweet potatoes and grate them coarsely.
