Tomato gravy is less frequently encountered than milk gravy, but it makes a delicious variation in the summer. Pork chops may be fried in much the same way as chicken and are well accompanied by this sauce.


  • 2 tablespoons fat plus drippings from the pan
  • ¼ cup (60 ml) minced onion


In the skillet, sauté the minced onion in the 2 tablespoons of fat until lightly browned. Stir in the flour and cook until it is well browned. Add the chopped tomatoes and stir well. Chicken stock or water may be needed, depending on the amount of liquid yielded by the tomatoes. Season with thyme, s
