Tomato gravy is less frequently encountered than milk gravy, but it makes a delicious variation in the summer. Pork chops may be fried in much the same way as chicken and are well accompanied by this sauce.

Ingredients

  • 2 tablespoons fat plus drippings from the pan
  • ¼ cup (60 ml) minced onion

Method

In the skillet, sauté the minced onion in the 2 tablespoons of fat until lightly browned. Stir in the flour and cook until it is well browned. Add the chopped tomatoes and stir well.
