The recipe which follows can be made the year round. In the summer the garden offers many opportunities: fresh peas, carrots for grating, radishes to be thinly sliced, tomatoes, green peppers, and fresh dill or basil. The cabbage should remain the essential feature of the salad; don’t overwhelm it with competing ingredients which should be present as complements. Other than this simple reminder, the only rule for coleslaw is that it reflect the season.
