Dilly Potato Salad

When I came up with the initial list of recipes for this book, I knew my Party Potato Salad had to be included. But toward the end of my recipe development, when I made the recipe for Roasted Smashed Potatoes, I threw together a potato salad with the leftovers that blew both Luis and me away. The result was basically this dilly potato salad. From experience, I can say it works great with leftover roasted
