My family has many variations and strong opinions about this seemingly simple breakfast dish. We all use a high starch Russet potato, and the variations start with the preferred size of the potatoes from small diced to larger bite-size pieces. As we sauté the potatoes the goal is to achieve a fully cooked interior, and some family members like their potato exterior lightly browned while others prefer a very crisp deep brown exterior.
