This is a rich, jalapeño spiked creamed corn that is weeknight friendly and easily batches for potluck dinners. I use nacho style jalapeños which brighten the dish and add mild heat. During the holiday season it is often requested, and I double and triple batch it to serve at our family gatherings.

Ingredients

  • ½ cup unsalted butter
  • ½ of a large red bell pepper, diced
  • ½ of a large green bell pepper

Method

  1. In a medium skillet on medium heat, melt the butter and cook the bell peppers and onions until softened, about 10 minutes.
  2. Add the cream cheese, jalapeños, garlic powder, salt, red pepper flakes and stir to combine until the cheese is melted, about 5 minutes.
  3. Meanwhile, place the thawed corn kernels in a large bowl and cover with cold water to hydrate
