This noodle salad is all about the toasted sesame seeds. They have an intense nutty flavour and bring a wonderful crunch to the dish. You can easily prepare this one evening and leave it in the fridge overnight for a nutritious and light lunchtime meal the next day.
Add the sesame seeds to a dry frying pan set over a medium-high heat and cook for 5–7 minutes, until they turn brown. Keep a close eye on the pan and shake it regularly to prevent the seeds from burning.
