Roxy spent a few years working in Hampstead where her favourite local deli served the finest roast veggie sandwich. It fast became her staple midday meal, so it felt only right to recreate our own version for this cookbook. Have a go at making your own hummus using one of our recipes.

Preheat the oven to 200°C/180°C fan/gas mark 6 and line a large baking tray with baking paper.

Trim the ends off the courgette and cut it in half, then cut each half into 5mm-thick strips. Halve the peppers and remove the seeds, then slice into 2cm-thick strips.
