There is something undeniably satisfying about the combination of miso and aubergine. We add some fresh chilli for heat, agave for sweetness and cucumber for a refreshing finish.
Slice the aubergines in half lengthways and place them skin-side down in an ovenproof dish. Then use a knife to score a diagonal pattern in each half.
