This easy recipe was passed on to me by Laura Lorca, the niece of the great Spanish poet Federico García Lorca. Laura, who directs the Lorca foundation in Granada, told me, “I know it’s a dish Federico would have loved, because it’s so Andalusian.” In its most frugal version, Laura explained, this popular soup from Granada is just fried almonds, garlic, potatoes, and water. To enrich it one can add chicken stock and/or jamón—which I’ve done here. It’s one of those elemental dishes th
