Quick to make, this excellent, easy soup is essentially a liquid version of fideuá, the Spanish-Mediterranean pasta paella studded with seafood. And like fideuá, it’s delicious with a little garlic mayonnaise stirred into the broth. You can serve it as a one-dish meal (as you would a filling Asian noodle soup) or in smaller portions as a first course.
