Ajo blanco, literally white garlic, is a smooth almond and garlic gazpacho popular in the province of Málaga. Containing no tomatoes or other vegetables, it is essentially an almond and olive oil emulsion diluted with ice water and enlivened by vinegar. Very Moorish tasting and completely original, ajo blanco is classically garnished with peeled green muscat grapes. Modern chefs, however, use ajo blanco as a blank canvas. Here, inspired by the ajo blanco I tasted
