This omelet is so delicious! Filled with chorizo, potatoes, and sautéed onion, it is covered with a layer of garlicky allioli mayonnaise that brings all the flavors together under a piquant cap. This tortilla—truita in Catalan—is the proud creation of the venerable bar Cal Pep in Barcelona. They call it a “tricky” omelet, presumably because allioli in a tortilla is so unexpected. It’s excellent as a tapa and even better as a light supper or luncheon dish.<
