Baked Eggs on Red Pepper Ragout

Piperrada, the sweet, luscious Basque bell pepper ragout, is an ideal partner for eggs. Though most commonly the eggs are scrambled into the peppers, here they bake in ramekins on top of the piperrada, with a round of toasted baguette tucked in the bottom.
