Piperrada, the sweet, luscious Basque bell pepper ragout, is an ideal partner for eggs. Though most commonly the eggs are scrambled into the peppers, here they bake in ramekins on top of the piperrada, with a round of toasted baguette tucked in the bottom. The result is one of the tastiest brunch dishes imaginable. The ragout can easily be beefed up with diced chorizo or serrano ham, which should be cooked with the peppers.
