Charring the eggplant right on a gas flame gives it an extra smokiness. However, you can also cook the whole eggplant under a broiler until soft and charred, about seven minutes per side. If cooking the eggplant directly over the flame, watch out for flare-ups. The egg in this allioli remains uncooked, so it should be of the highest quality.
