Whenever you see a recipe for a folksy dish that features turnips, meat, and smoked porkstuffs, you can pretty much bet it’s from the mountainous region of Asturias. This stew is great rib-sticking fare for a cold winter night.

Ingredients

  • 3 pounds well-marbled beef chuck, cut into 1½-inch chunks
  • Coarse salt (kosher or sea) and freshly ground black pepper

Method

  1. Preheat the oven to 300°F.
