Here’s an old Andalusian recipe that enticingly displays the influence of the Moorish cuisine of Al-Andalus (the Arabic name for Andalusia). Despite the presence of honey, the dominant flavors here are tart, rather than sweet, and sour. The chicken needs to marinate for at least two hours, so plan ahead. Sautéed spinach would make a good accompaniment.
