Combining eggplant with either sugar, honey, or cane syrup (which offset its slight bitterness) is an Arab legacy, encountered frequently in both Catalan and Andalusian cooking. (Eggplant jam is quite common in Spain.) These ethereal eggplant “fries” with a light drizzle of honey are one of the most inspired examples of this pairing.
