Gin and tonic, Spain’s favorite cocktail, inspires many of the country’s playful modern dessert chefs. Serve this granita in martini glasses as a surprise “aperitif,” accompanied by savory skewers of green olives, anchovies, and pimiento chunks.

Ingredients

  • 2 cups tonic water, preferably Schweppes
  • cup gin
  • 2 tablespoons

Method

Place the tonic water, gin, lime juice and zest, and sugar in a blender and wait for the bubbles in the tonic to subside, about 10 minutes. Blend briefly, until the sugar is just combined. Taste and add more sugar, if needed. Freeze as instructed. Serve garnished with lychees.
