This herbal granita is refreshing with just about anything, sweet or savory. I especially like it as a cool, contrasting topping for the gazpacho recipes in this book. You can also make the granita with basil.

Ingredients

  • cups fresh mint leaves
  • Boiling water
  • Ice water
  • ½ cup

Method

  1. Place the mint leaves in a colander and slowly pour boiling water over them to blanch them so they don’t discolor. Immediately dunk them in a bowl of ice water to refresh.
  2. Place the sugar and 2 cups water in a small saucepan and bring to a boil over high heat, stirring until the sugar dissolves. Let cool completely.
