This spice mix typifies the flavours abundant in the food of the south-western Indian state of Kerala, where the spices are usually mixed with aromatics and made into a wet paste. This mix can be cooked into minced onion, ginger and garlic and added to coconut milk or stock.

Ingredients

  • 1 teaspoon black peppercorns
  • seeds from 6 green cardamom pods
  • 5

Method

Mix spices and store in a sealed jar. Grind spices to a fine powder as required — this mix relies on freshness for best flavour.
