Chilli prawns with somen noodles and bean sprouts

This is what I turn to when I crave a good chilli fix — the aromatic flavourings used here are extremely addictive.

Ingredients

  • 400 g dried somen noodles
  • 1 teaspoon Sichuan peppercorns
  • 24

Method

  1. Cook noodles for 2 minutes, then strain and set aside.
  2. Dry-roast peppercorns over gentle heat until fragrant. Cool, then grind to a fine powder.
  3. Shell prawns, leaving tails intact, then remove intestinal tracts.
  4. Cut cucumbers in half lengthwise, then remove seeds and finely slice across.
  5. Lightly dust prawns with ground Sichuan pepp
