The intoxicating fragrance and flavour of saffron works wonderfully with pears. Saffron pears can be served just as they are or complemented by a fragrant ice-cream or sorbet, a moist almond cake or brioche. This recipe comes from Paramount Desserts, where the pears were teamed with orange cardamom ice-cream. They go equally well with Tangelo Cardamom Ice-cream
