This is one of my preferred methods of preparing pears during winter, and one of my favourite flavour combinations. Serve the pears unadorned or with warm gingerbread, brioche or crème brulée.

Method

  1. Bring all ingredients except pears to a boil in a wide, heavy-based saucepan, then simmer for 15 minutes to allow flavour to intensify and liquid to reduce slightly.
  2. Peel, halve and core pears, then arrange carefully in liquid. Cover pears with baking paper and simmer gently until cooked and softened, about 30 minutes.
