Make this versatile fruit butter to have on hand to add to a tart or baked pastry, to spread on brioche or toast, or to flavour a winter pudding. Try making the butter with apricots, the flavour of which is also wonderfully enhanced by cardamom.

Ingredients

  • 2 kg Granny Smith apples
  • 350 ml sparkling apple juice
  • 250

Method

  1. Roughly chop apples, including peels and cores. Bring chopped apple and apple juice to a boil in a large saucepan over gentle heat, stirring regularly to prevent sticking.
  2. Pour contents of pan into a conical sieve positioned over another pan, then press as much apple and juice as possible through sieve, using a large wooden spoon.
