A galette is a fine tart with ethereal light layers of pastry and fruit. For a special spice treat, add a scoop of Mace Ice-cream to the centre of each tart as you serve them.



  1. Preheat oven to 180°C.
  2. Cut quinces into thin slices lengthwise.
  3. Starting from the centre of each pastry round, arrange quince slices around pastry, slightly overlapping them as you go. Mix sugar and cinnamon, then dust fruit.
