When people come to Alsace, they often seek out the most famous specialties of the region—Alsatian onion tart and choucroute garnie. Alsace is one of the great charcuterie centers of Europe, and we use this (sliced pork belly, ham, sausages) to “garnish” or top our sauerkraut. And my uncle, Michel Kreuther, catered to a lot of tourists at his restaurant and hotel in the mountain town of Dabo. Like the pot-au-
