Nothing is wasted on a farm in Alsace. This is one of my favorite ways to put leftover pot-au-feu meat to use, making a stuffing for hollowed-out potatoes. You can also use any cooked poultry, like chicken or turkey, that you happen to have on hand. One way to make this is to stuff two halves of a potato then tie them together with string to bake them whole.
