  • 6 black radishes
  • 1 tablespoon salt, plus more to taste
  • 1 tablespoon

Method

Wash and trim the radishes. Shred them on a vegetable shredder or in a food processor with a shredder blade. Put them in a bowl, sprinkle them with the salt, and let them sit for an hour or so, pressing on them occasionally, three or four times, to help extract the water.
