These are so delicious we made them every other week in Alsace—simple potato pancakes. My mother would serve them with split pea soup in the winter, or with sausage. They’re great just as a side to a salad or served with applesauce. What makes these pancakes special is the combination of onions, shallots, and leeks, plus the chopped herb—and of course, the aggressive pepper and nutmeg seasoning.
