This was a favorite of my grandad’s, and a staple of Alsace, very much reflecting the rustic style of the region. Often one of the farms near ours would have more calf’s liver than they needed and would give extra to us. And this is what we’d make. These light but rich dumplings are served in virtually every wine salon, or winstub, which is the traditional Alsatian bistro, like the bouchons of Lyon.
