This is a drier, sweeter, crispier version of the butter cookie that also uses a nut flour for additional flavor. A traditional spritz cookie is extruded through some shape of die. We used an old-fashioned hand-cranked meat grinder to create long rectangular cookies. But you can also use a cookie press to make various shapes or they can be rolled and cut like regular butter cookies.
