These are delicious cinnamon-flavored cookies. The dough is like a sablé, very delicate, and results in a delicately crunchy cookie. I like to paint the top with a sweet glaçage.
Combine the all-purpose flour, butter, granulated sugar, almond flour, and cinnamon in a mixing bowl and bring it all together by hand, as you would a pastry dough. Wrap it in plastic and refrigerate for at least an hour and as long as one day.
