Amer-Biere Pâte de Fruit

Picon is a brand of Amer and is a French aperitif, slightly bitter and with an orange flavor. You can buy it, but we prefer to make our own. It’s often added to beer in Alsace to create a more flavorful and complex drink, thus this pâte de fruit. We make a separate froth, gelled, so that it looks just like a miniature beer. The gel can be made ahead, but the foam is best made the day you intend to serve it.
