Foie Gras Terrine and Toasted Pistachio Praline with Fennel Pollen Waffle and Smoked Date Jam

I created this recipe on a cooking trip in Japan and added tart orange to counter the sweet dates and Strega, an Italian herbal liqueur, considered a digestif. Its distinctive yellow color comes from saffron. The alcohol content is comparable to most spirits, but it has a sweetness and viscosity typical of liqueurs. Among its approximately seventy herbal ingredients are mint and fennel, giving it a complex flavor with minty and coniferous notes.
