These are warm, comforting raviolis, served in a jus seasoned with mustard and vin jaune. It’s important to chop the blanched and peeled sweetbreads by hand so that they have a great texture. Vin jaune is an oxidized, sherry-like wine made in the Jura region, in eastern France, near Alsace, from Savagnin grapes. It’s very high in acid and is what we would use in Alsace, but it can be expensive here so it’s fine to use a less expensive option, such as Tio Pepe, a Spanish sherry that’s simila
