This is a two-part process. We first use roasted chicken bones and feet to make the jus. But then we fortify it with roasted chicken wings and vegetables. When you cook a stock or a jus this long, you’re pulling out abundant gelatin, but the long cooking time deadens the flavor, so we want to add that flavor back, with a second reinforcement.
