This dish started with the horseradish, which grows wild all over Alsace. I was making a horseradish tea to use as a sauce and it was as strong as wasabi. I loved it. I served it simply with vegetables, and people loved the punch of this simple dish. Here I add cream to enrich it, serve it with the same vegetables, and because it’s like wasabi, very rare, olive oil–poached salmon.
