These are always a talking point. Little elegant bunches of aromatic pickled grapes which I either serve with cheese, with the delicious venison salami produced by Great Glen Charcuterie, or as part of a mezze spread. I created these pickles as the palate refresher for the finger food pairing with the new Chivas whisky Captain’s Reserve as the grapes reflect the cognac barrel, and the combination of spices within the flavour spectrum bring real character to the fruit. You need to use firm, seedless black grapes and I tend to use the Sable variety when I can find them. I have to hide these pickles when Yazzie comes home as they have become her all-time favourite.
