    I love this silky traditional milk pudding, which you can enjoy throughout Turkey, the Middle East, and North Africa. The word ‘muhallabia’ comes from the Arabic for milk, ‘halib’, and the chilled pudding is traditionally flavoured with rose water, orange blossom water, cardamom or mastic, the aromatic gum of a tree from the pistachio family.
