  • 1 kg new potatoes
  • 4 tomatoes, roughly chopped
  • 1 tsp g

Method

Roast the potatoes following the instructions, but take the potatoes out of the oven after 25 minutes, just as they are starting to take on some colour, and add the tomatoes and all the spices. Mix well, return to the oven and roast for a further 15 minutes.

Before serving, scatter over the red onions and coriander and check the seasoning.
