Lightly crush the garlic cloves and the herbs with the back of a knife or in a pestle and mortar.
Roast the potatoes following the instructions, but take the potatoes out of the oven after 25 minutes, just as they are starting to take on some colour, and add the garlic, lemon and herbs. Mix well, return to the oven and roast for a further 15 minut
