Spanish in origin, a romesco sauce is a good way to spice up ali sorts 0/veg. Try it with roasted or boiled new or salad potatoes or drizzle over cooked leeks or spring and summer greens. Traditionally it often contains breadcrumbs to thicken it but this version is gluten-free. It can be made a little ahead and will keep in the fridge for a couple of days.
