Meaning poor man–s potatoes’, this rustic Andalusian dish of potatoes slowly fried in oil is hearty and filing. It is enough for a vegetarian main course on its own, served with a crisp green salad, but could also accompany any simply-cooked chicken or steak as an alternative to roast potatoes or fries. Use a firm, waxy potato; floury ones will just collapse in the pan.
